Not quite your grandmother’s rice and greens, but we think that’s a good thing! Healthier for you and much better for your waistline, this easy and satisfying recipe is also packed with antioxidants. Our “Rice” and Greens is great for you to take for lunch or on a picnic as you can make it ahead of time and store overnight in the refrigerator.
Ingredients
1 package MedWell1-2-3 Orzo “Rice”
2 cups baby spinach or arugula
1⁄4 cup onion, chopped
1⁄2 teaspoon garlic, minced
1 teaspoon olive oil
pinch nutmeg, grated (optional)
salt and freshly ground pepper to taste
“Rice” and Greens
Preparation
- Make orzo as directed (suggestion: use chicken broth to make orzo for flavoring).
- Stir spinach (or arugula), onion, garlic, and olive oil into the hot rice, cover, and let stand for 5 minutes.
- Season with nutmeg, salt, and pepper.

Apple Cheddar Bagel Sandwich |

A mere three ingredients – what could be more simple? For breakfast, lunch or snack, this is a pleasant combination of sweet and savory.
Ingredients
1 bagel, split and toasted
1 oz. slice low fat cheddar cheese
1/2 Granny Smith apple, thinly sliced
Directions
- Preheat the broiler.
- Toast bagel 1-2 minutes under broiler.
- Take bagel out from broiler and add slice of cheddar cheese. Brown lightly under broiler for 1-2 minutes.
- Spread apple slices over cheese and top with other bagel half and serve.

Baked Strawberry French Toast |

Everybody loves French Toast, especially kids. But on busy mornings, who has the time to prepare it? The advantage of this recipe is twofold. It can be prepared and assembled the night before and popped into the oven the next morning. The overnight soak allows the bread to be evenly saturated with the egg mixture yielding a more tender French Toast.
Ingredients
2 tablespoons egg beaters
1/3 cup low fat milk
1 teaspoon brown sugar
1/4 teaspoon vanilla
Cooking spray
1/8 cup strawberries sliced
2 slices Medwell bread, crusts removed
Directions
- Preheat oven to 375 degrees.
- In a bowl, mix the egg, milk, sugar and vanilla.
- Spray a small loaf pan with cooking spray.
- Pour the egg mixture into the pan. Place 2 slices of bread in the pan in one layer.
- Scatter the strawberries on top of the bread. Cover with foil (Note: this may be stored overnight in the refrigerator and baked the next day).
- Bake for 10 minutes. Remove foil and bake another 5-10 minutes.

Caribbean "Rice" and Beans |

With a vibrant flavor that practically yells “summertime”, our Caribbean “Rice” and Beans brings the festive mood of those pristine beaches right to your table. Temper the heat of the recipe to your taste by adjusting the amount of hot pepper sauce. Colorful and fresh-tasting, this is also a great recipe to make ahead of time and take for a meal away from home.
Ingredients
1 package MedWell1-2-3 Orzo
1⁄4 teaspoon extra-virgin olive oil
1 large pimiento or roasted red bell pepper, cut in short, thin strips
1⁄2 green bell pepper, cut in short, thin strips
1 garlic clove, finely chopped
1⁄4 cup canned black beans, rinsed
1 teaspoon distilled white vinegar
1 tablespoon finely chopped fresh cilantro
dash hot pepper sauce
salt and freshly ground pepper to taste
Caribbean Rice and Beans
Preparation
- Heat oil in a large skillet over medium high heat until hot but not smoking.
- Add pimientos or red peppers, green pepper, and garlic and sauté for 2 minutes. Add black beans, vinegar, and hot sauce to taste.
- Bring the mixture to a boil; then reduce heat to low, cover, and simmer for 5 minutes.
- Cook the orzo in chicken broth and drain.
- Stir in rice and cilantro. Taste and adjust seasonings. Serve accompanied by additional hot sauce.

Citrus Spinach and "Rice" Salad |

- Add dressing just before serving.
